Freekeh Fever

What is Freekeh? Freekeh (pronounced “free-ka”) is a super food. It is an ancient grain first mentioned in an early 13th century cook book. It is high in nutrition and has many health benefits. The grains are harvested while still young, green and soft and put into piles. The piles are then carefully set on fire so only the straw and chaff burn and not the seeds. The high moisture content of the seeds prevents them from burning. Once the wheat has been roasted it undergoes further sun-drying to make the flavour texture and colour more uniform. It also captures the freekeh at a peak taste. Freekeh is free from GMO, colouring, additives and preservatives. It is full of flavour with a slight nuttiness and a hint of smokiness due to the roasting process. The¬†product is versatile enough to be used in soups, salads,casseroles, risottos, desserts and pastries.
